上湯白菜
材料:
白菜仔6兩
蝦米一兩
豆腐一盒
鹹蛋2隻
皮蛋一隻
薑一小舊
白胡椒粉半茶匙
處理:
1. 白胡椒,放砧板上,用菜刀壓碎。
2. 白菜,打直一開二,清水浸。
3. 薑,去皮,洗乾淨。
4. 鹹蛋,刮去灰,洗乾淨,打在碗內。
5. 皮蛋,去殼,洗乾淨。
6. 薑,切片,拍鬆。
7. 蝦米,清水浸一分鐘,清水洗乾淨。
8. 豆腐,切粒。
9. 白菜,洗兩次,擎乾水。
10. 煲滾清水一升。
烹調:
1. 蝦米,白鑊,慢火,爆香。
2. 加入薑片在蝦米內,加入油半茶匙,爆香。
3. 加入鹹蛋黃,壓爛,炒香。
4. 加入皮蛋,壓成細舊。
5. 加入大滾水一升,大火滾起。
6. 加入豆腐,冚蓋,大火滾起,滾一分鐘。
7. 加入鹹蛋白,大火滾起。
8. 加入白菜,及白胡椒,滾一分鐘。
9. 完成,倒入大碗內。
10. 可享用。
Salted and century eggs with pak choy in soup
Ingredients:
Baby pak choy 6 taels
Dried sea shrimps 1 tael
Tofu 1 box
Salted eggs 2 Nos.
Century egg 1 No.
Ginger (small) 1 No.
White pepper 0.5 tsp
Preparation:
1. White pepper, put on chopping board. Squash it with chopper.
2. Pak choy, divide each into 2 shares vertically. Soak in tap water.
3. Ginger, get it peeled. Rinse with tap water.
4. Salted eggs, remove ashes. Rinse thoroughly. Break in a bowl.
5. Century egg, remove shell. Rinse thoroughly.
6. Ginger, get it sliced. Beat well.
7. Dried sea shrimps, soak in tap water for a minute. Rinse with tap water.
8. Tofu, dice in cubes.
9. Pak choy, rinse twice. Drain.
10. Boil up 1L of water.
Steps:
1. Dried sea shrimps, plain wok, low flame, fry well.
2. Add in ginger in the dried sea shrimps, add in 0.5 tsp of oil, fry well.
3. Add in the salted egg yolks, get them squashed, fry well.
4. Add in century egg, squash in small pieces.
5. Add in 1L of boiled-up water, heat up at high flame.
6. Add in tofu, cover up the wok. Heat up at high flame, boil for a minute.
7. Add in salted egg white, heat up at high flame.
8. Add in pak choy and pepper, boil for a minute.
9. Complete. Pour into a big bowl.
10. Serve.
This dish, costs HK$100 in restaurants. You cook only costs $20. It is simple and easy.
